Though coffee grows abundantly in Sumatra, the local environment also poses a challenge when it comes to processing the beans. Whereas coffee that's grown in other regions is either allowed to naturally dry in the sun with the cherry intact or has the fruit removed in a washing process before being sun dried, the lack of reliable sunshine in Sumatra means that coffee growers can't rely on time-consuming sun drying to help remove the fruit and parchment from the coffee beans. Instead, this coffee is "wet-hulled," which means the skin of the cherry is removed and the beans are dried for just a few hours before being run through a wet-huller that uses friction to remove the thick parchment layer from the bean. Wet-hulled coffee has a flavor that's somewhere in between the bright, fruity taste of naturally processed coffee and the complex depth of washed coffee. The final result of this unique processing method is a coffee with dark, earthy tones, notes of subtle spice and rich molasses, and a distinctive herbal aroma. Allow this slurry to bloom for 30 to 40 seconds before filling your French press all the way up and allowing it to steep for 3 to 4 minutes before plunging the grounds down.
